WEST of ONE’s Estate grown and produced Rose of Pinot Noir, may be one of the best Rose’s you’ve had to date. It’s bright, crisp and refreshing, while also being serious, intriguing and elevated. We harvest our Pinot Noir for Rose roughly 3 weeks before our main harvest for our estate Pinot Noir. The sugars are lower, acid levels higher, and to be frank, the fruit at this point in the growing year is tasting AMAZING. After a true mid-night harvest, the grapes are brought to the winery and the grapes are gently crushed, then immediately pressed. The juice cold settles for two days, then is transferred to Neutral French Oak Barrels (60%) and stainless steel drums (40%) for fermentation. After three days, fermentation begins with native yeast paving the way for a long, slow, cold fermentation. The result of this meticulous process, is an absolutely gorgeous, mouthwatering and fun, yet serious Rose. Enjoy, friends! It’s officially Rose Season!!
